  • 1 rabbit, dressed
  • 1 c. red wine
  • salt and pepper
  • 2 garlic cloves
  • 1 slice lemon
  • 1 onion, sliced
  • celery leaves, chopped
  • 1 Tbsp. allspice
  • bacon slices
  • 1 tsp. sage
  • rabbit liver, sliced
  • 1 garlic clove
  • 1 slice lemon
  • 3 Tbsp. butter
  • salt and pepper
  • red pepper
  • 1/2 c. white wine
  • 1 tsp. tomato paste

Directions

    Marinate rabbit in the refrigerator in a mixture of the next 7 ingredients overnight.

    Cut into serving size pieces.

    Cover each piece with a bacon slice, sprinkle with sage, brown in oil and bake at 325° for 1 1/2 hours.
