  • 1 large onion, sliced
  • 1 lb. mushrooms, sliced
  • 1/2 c. red wine
  • 2 cloves garlic, minced
  • 1 Tbsp. Worcestershire sauce
  • 1 pkg. Uncle Ben's long grain and wild rice
  • 1 1/2 oz. wild rice, soaked for one day
  • 1 (10 oz.) pkg. frozen, chopped spinach, cooked
  • 4 oz. cream cheese
  • 1 c. white raisins, soaked in Grand Marnier for a few hours
  • 1 1/2 c. chicken broth (maybe a little more)

    Saute onion and mushrooms.

    Add wine, garlic and Worcestershire sauce.

    Cook 2 rices in chicken broth 45 minutes.

    Mix raisins with rice.

    Mix cooked spinach and cream cheese together.

    Layer rice, spinach and mushroom/onion.

    Bake 45 minutes at 350°.
