  • 1 c. rice
  • 2 c. broth (chicken or beef)
  • 1 medium onion
  • 1 (8 oz.) sliced mushrooms, drained
  • 1 to 2 Tbsp. curry powder to taste
  • 1/2 to 1 Tbsp. parsley flakes to taste
  • butter

Directions

    Slightly brown onion in butter, then add dried rice and brown a little more, about 2 minutes.

    Turn into casserole dish.

    Add broth, mushrooms, curry and parsley flakes.

    Stir, then add butter.

    Bake at 350° for about 45 minutes.

    Stir to fluff.
