Baked Rice Pudding

- 3/4 c. Minute rice
- 2 3/4 c. milk
- 1/3 c. white sugar
- 1/2 tsp. salt
- 1/3 c. raisins
- 2 eggs, slightly beaten
- 1 tsp. vanilla
- 1/4 tsp. nutmeg
Directions

1Combine rice, milk, sugar, salt and raisins in saucepan. Bring to a boil, stirring constantly.

2Reduce heat, cover and simmer 10 minutes, stirring occasionally.

3Mix eggs, vanilla and nutmeg in 1-quart casserole. Slowly stir in rice mixture and blend well.

4Place casserole in a pan of hot water.

5Bake at 375° for 25 to 30 minutes or until top is set.

6Cool at least 1 hour before serving.

7Serves 6 to 8.
