  • 15g butter
  • 1/2 cup dry short-grain rice
  • 2 cups milk
  • 1 cup cream
  • 1/4 cup caster sugar
  • pinch salt
  • 1 tsp vanilla essence

Directions

    Put butter and rice in pan, coat the rice lightly on a gentle heat. Once melted, add milk, cream, caster sugar and pinch salt. Bring to a gentle boil, then simmer adding vanilla.

    Pour mixture into a prepared bain marie dish and cook for 1 and a half hours at 160 degrees Celsius.
