  • 1 egg, separated
  • 2-3/4 cups milk
  • 3/4 cup MINUTE White Rice, uncooked
  • 1/4 cup sugar
  • 1/4 tsp. salt
  • 1/8 tsp. ground nutmeg
  • 1 tsp. vanilla
  • 2 Tbsp. sugar

    Heat oven to 325F.

    Mix egg yolk and 1/4 cup milk in saucepan.

    Stir in remaining milk, rice, 1/4 cup sugar and salt.

    Bring to boil.

    Reduce heat to low; cover and simmer gently 10 minutes, stirring occasionally.

    Remove from heat.

    Stir in nutmeg and vanilla.

    Pour into greased 1-quart baking dish.

    Bake 20 minutes.

    Beat egg white until foamy throughout; gradually add 2 tablespoons.
