Baked Salmon

Ingredients

  • 1 (5 lb.) salmon (whole or piece), scaled and fins removed
  • salt and pepper
  • flour
  • 6 Tbsp. butter, melted
  • 1 large onion, minced
  • 1 clove garlic, minced or pressed
  • 1 Tbsp. Worcestershire sauce
  • 2 tomatoes, peeled, drained of juice, seeded and chopped or 1 1/4 c. canned tomatoes, drained
  • 1/4 c. (approximately) light cream
  • beurre manie (1 Tbsp. butter and 1 Tbsp. flour kneaded together), if necessary
  • lemon wedges
  • parsley

Directions

    Rub the salmon inside and out with salt and pepper; dredge with flour.

    Put into a well-greased narrow baking pan.

    Bake in a preheated 425° oven for 15 minutes, then add the butter, onion, garlic, Worcestershire sauce and tomatoes.

    Reduce heat to 375°. Bake for 30 minutes longer, basting frequently.
