- 1 pound small potatoes peeled, thinly sliced
- 1 onion thinly sliced
- 1 clove garlic minced
- 1 red pepper deseeded, thinly sliced
- 1 fresh red chili small, finely chopped
- 1 tablespoon fresh oregano leaves finely chopped, plus extra for garnish
- 13 1/2 ounces chopped tomatoes
- 4 cod fillets
Directions

1Preheat oven to 425°F. Place potatoes in a microwave-safe dish. Cover and cook on HIGH (100%) for 8-10 mins, until tender. Drain.

2Meanwhile, lightly coat a frying pan with oil. Saute onion and garlic over medium heat for 2 mins. Add pepper and cook for 1 min. Add chili, oregano and tomatoes. Bring to a boil then reduce heat and simmer for 5 mins. Transfer to a baking dish and top with potatoes and fish, pushing lightly into sauce. Bake for 10 mins. Serve garnished with oregano.
