Baked Spinach Tomatoes

- 12 medium tomatoes
- 1 1/2 tsp. salt
- 1 1/2 tsp. sugar
- 3 (10 oz.) frozen chopped spinach
- 1 medium onion, chopped
- 1/3 c. butter
- 3 Tbsp. flour
- 1 1/2 c. milk
- 3/4 tsp. salt
- 1/2 tsp. white pepper
Directions

1Cut top 1/4 off tomatoes.

2Scoop out.

3Sprinkle insides with salt and sugar.

4Invert tomatoes and drain.

5Cook spinach briefly. Press water out.

6Saute onion in butter.

7Add flour.

8Stir until blended, then add milk.

9Stir until thick and bubbly.

10Add spinach, salt and pepper.

11Fill tomatoes.

12Can sprinkle tops with buttered crumbs or Parmesan cheese.

13Prepare ahead, but do not bake up to 24 hours.

14Bake at 350° for 20 minutes.

15Let stand 30 minutes.
