- 2 lb. yellow squash, cut in 1/2-inch slices
- 3 Tbsp. chopped onion
- 3 eggs, beaten
- 1/2 tsp. hot sauce
- 2 tsp. parsley flakes
- salt and pepper to taste
- 1/2 c. melted margarine
- 2 c. round buttery cracker crumbs
Directions

1Cook squash in small amount of boiling water until tender. Drain well.

2Add remaining ingredients, except 1 cup cracker crumbs.

3Stir gently.

4Spoon mixture into lightly greased 1 1/2-quart casserole and sprinkle with remaining cracker crumbs. Bake at 350° for 35 to 40 minutes.

5Serves 6.
