Baked Squash

Ingredients

  • 2 lb. yellow squash, cut in 1/2-inch slices
  • 3 Tbsp. chopped onion
  • 3 eggs, beaten
  • 1/2 tsp. hot sauce
  • 2 tsp. parsley flakes
  • salt and pepper to taste
  • 1/2 c. melted margarine
  • 2 c. round buttery cracker crumbs

Directions

    Cook squash in small amount of boiling water until tender. Drain well.

    Add remaining ingredients, except 1 cup cracker crumbs.

    Stir gently.

    Spoon mixture into lightly greased 1 1/2-quart casserole and sprinkle with remaining cracker crumbs. Bake at 350° for 35 to 40 minutes.
