Baked Squash

Ingredients

  • 3 lb. yellow squash
  • 1/2 c. onion, chopped
  • 2 eggs
  • 1 Tbsp. sugar (optional)
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 c. margarine, divided
  • 1/2 c. cracker meal or bread crumbs

Directions

    Wash and cut up squash; boil until tender.

    Drain thoroughly and mash.

    Add all ingredients, except 1/4 cup margarine and bread crumbs.

    Pour mixture in baking dish.

    Melt 1/4 cup margarine and pour over mixture.

    Sprinkle with crumbs.

    Bake at 375° for 1 hour or until brown on top only.
