- 3 lb. yellow squash
- 1/2 c. onion, chopped
- 2 eggs
- 1 Tbsp. sugar (optional)
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 c. margarine, divided
- 1/2 c. cracker meal or bread crumbs
Directions

1Wash and cut up squash; boil until tender.

2Drain thoroughly and mash.

3Add all ingredients, except 1/4 cup margarine and bread crumbs.

4Pour mixture in baking dish.

5Melt 1/4 cup margarine and pour over mixture.

6Sprinkle with crumbs.

7Bake at 375° for 1 hour or until brown on top only.
