- 4 egg whites
- pinch of salt
- 1/2 tsp. cream of tartar
- 1 tsp. vanilla
- 1 c. sugar
Directions

1Beat egg whites until foamy.

2Add cream of tartar, salt and vanilla.

3Beat until stiff and dry.

4Add sugar and continue beating until sugar has dissolved.

5On an oiled baking sheet, spoon mixture into a 9-inch round.

6With spoon, push sides up around circle like center is shelled out so sides are at least 1-inch high.

7Bake at 275° until almost tinted.

8Turn off heat and leave in oven for 10 to 15 minutes.

9Cool slightly before removing from pan.

10Fill with prepared lemon, chocolate or butterscotch pie filling.
