Baked Squash

  • 3 lb. yellow crooked neck squash (unpeeled)
  • 1/2 c. chopped onion (more if fresh green onion)
  • 1/2 c. cracker crumbs
  • 2 eggs
  • 1 stick margarine
  • 1 Tbsp. sugar

Directions

    Precook squash by steaming until just tender.

    Mix eggs into mashed squash.

    Add onion, mashed saltines, salt and pepper to taste, sugar and melted butter.

    Mix together well.

    Pour into glass baking dish.

    Bake at 375° for 1 hour.
