- 3 lb. yellow crooked neck squash (unpeeled)
- 1/2 c. chopped onion (more if fresh green onion)
- 1/2 c. cracker crumbs
- 2 eggs
- 1 stick margarine
- 1 Tbsp. sugar
Directions

1Precook squash by steaming until just tender.

2Mix eggs into mashed squash.

3Add onion, mashed saltines, salt and pepper to taste, sugar and melted butter.

4Mix together well.

5Pour into glass baking dish.

6Bake at 375° for 1 hour.
