- 2 small zucchini
- 1 small yellow squash
- 3 tablespoons parmesan cheese
- 1 1/2 teaspoons paprika
- 1 1/2 teaspoons garlic powder
- 3/4 teaspoon black pepper
- 3/4 teaspoon salt
- 2 tablespoons olive oil
Directions

1Preheat the oven to 450 degrees.

2Spray a cookie sheet with non-stick spray.

3Cut the vegetables in half lengthwise and then cut each section in half crosswise.

4Cut the quaters into long strips 1/4 inch thick.

5Mix all of the dry ingredients in a large bowl.

6Add the vegetables to the bowl and mix until coated with the seasonings.

7Drizzle olive oil over vegetables and mix until the vegetables are coated with oil.

8Place the vegetables in a single layer on the cookie sheet.

9Bake for 10 minutes. Turn the vegetables over and bake for another 5 to 10 minutes, until vegetables are tender.
