Baked Squash Surprise

Ingredients

  • 1 1/2 lb. fresh yellow squash or 2 (16 oz.) cans squash
  • salt and pepper to taste
  • 1 (2 oz.) jar chopped pimiento
  • 1 medium onion, chopped fine*
  • 1 c. Flav-O-Rich sour cream
  • 1 can cream of chicken soup
  • 4 small carrots, grated
  • 1 pkg. cornbread or herb stuffing or 4 c. cornbread
  • 3/4 c. Flav-O-Rich butter, melted

Directions

    Cook squash until tender; drain, mash and season.

    Stir in remaining ingredients, except stuffing and Flav-O-Rich butter. Mix Flav-O-Rich butter and stuffing; divide.

    Line casserole with stuffing (little more than half of it).

    Add squash mixture.

    Top with remaining stuffing.

    Bake for 30 minutes at 350°.

    Serves 8 to 10.
