  • 1/4 c. butter
  • 1 medium onion, minced
  • 1 garlic clove, minced
  • 2- 10 oz. pkg. frozen chopped spinach, thawed and drained
  • 4 large tomatoes, halved
  • 2 tsp. salt
  • 2 beaten eggs
  • 1 c. breadcrumbs

Directions

    Melt butter and saute onions and garlic, add spinach.
  2. 2
    Remove from heat in breadcrumbs, egg and salt.
  3. 3
    Put into halves of tomato and put into a baking dish.
  4. 4
    Refrigerate a couple of hours.

    Bake for 35 minutes at 350°.
