- 4 small firm ripe tomatoes
- salt and pepper
- 1/3 c. bread crumbs
- 2 Tbsp. chopped parsley
- 2 Tbsp. vegetable oil
Directions

1Preheat oven to 400°.

2Wash tomatoes and cut off stem ends. Cut the tomatoes in half crosswise.

3Sprinkle them with salt and pepper.

4Mix the bread crumbs, parsley and oil together in a small bowl.

5Spread each tomato half with bread crumbs mixture.

6Place tomatoes in greased baking dish.

7Bake 10 to 15 minutes or until bread crumbs are golden brown.
