- 6 large tomatoes
- 2 cloves chopped garlic
- 2 shallots, chopped
- 3 Tbsp. breadcrumbs
- 2 Tbsp. chopped parsley
- 2 Tbsp. basil
- 1/2 tsp. thyme
- 1/4 tsp. rosemary
- salt and pepper
- olive oil
Directions

1Cut tomatoes across the top.

2Scoop out seeds.

3Mix together shallots, garlic and herbs.

4Place tomatoes (cut side up) on a baking sheet.

5Salt and pepper them.

6Sprinkle with the herb and garlic mixture, then with breadcrumbs.

7Sprinkle with a little olive oil.

8Bake in a preheated oven at 400° for 10 minutes.
