  • 1 lb. cod, haddock, cusk or any white fish fillets
  • 1/2 c. crushed corn flakes
  • 4 Tbsp. melted butter or margarine
  • 3 Tbsp. lemon juice
  • 1/2 c. white wine
  • 1/2 tsp. thyme
  • 1/4 tsp. salt
  • 1/4 c. Parmesan cheese
  • 1/2 tsp. tarragon
  • 1/8 tsp. pepper

    Melt butter in a baking dish.

    Place 1 pound of fish in dish. Drizzle lemon juice over fish.

    Sprinkle fish with thyme, tarragon, salt and pepper.

    Pour white wine over fish.

    Mix crushed corn flakes and Parmesan cheese together.

    Sprinkle flakes over fish.

    Bake in a 425° oven for 20 minutes.
