Ingredients

  • 8 ounces margarine
  • 1 cup sugar
  • 1 egg (minus shell of course)
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 14 cups matzo cake meal
  • 34 cup potato starch

Directions

    Preheat oven to 350 degrees.

    Line cookie sheets with parchment paper for easy cleanup.

    Sift cakemeal and potato starch together.
  4. 4
    Cream margarine, sugar and vanilla till light and fluffy.

    Add egg and yolk.

    Mix well.

    Add the dry ingredients to the margarine/sugar mixture and mix thoroughly.

    At this point you may chill dough if you need to.

    Put dough into a cookie press fitted with your favorite shape.

    Press onto parchment paper, decorate if you wish and bake for 25-30 minutes or till lightly golden brown at the edges.

    Remove baked cookies to a wire rack to cool.
