  • 11/2 pounds red cabbage, cut into chunks
  • 11/2 cups water
  • 1/4 cup balsamic vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon caraway seed
  • Kosher salt
  • Freshly ground black pepper

Directions

    In a medium pot, bring the cabbage, water, vinegar, sugar, caraway seed, 1 teaspoon salt and 1/2 teaspoon pepper to a simmer.

    Cook, covered, until the cabbage is tender, about 20 minutes.

    Uncover the pot and simmer until most of the liquid has evaporated, about 5 minutes more.

    Season with salt and pepper to taste and serve.
