Balsamic Roast Beef

- 3 Tablespoons Butter
- 2- 1/4 ounces, weight Roasting Beef
- 1 Tablespoon All-purpose Flour
- 1 Onion, Cut Into Quarters
- 1/2 cups Balsamic
- Salt And Pepper
- 1- 3/4 cup Good Beef Stock
- 1 cup Double Cream
- 2 Tablespoons Cornstarch (Optional)
Directions

1Melt butter in a pot (not too large).

2Dust the beef with flour and tap gently to remove excess flour.

3Sear beef on all sides until nicely browned.

4Alway through searing, add onion and cook together with the beef, flipping them while cooking to prevent them from browning too much.

5When beef has been seared on all sides, add balsamic vinegar and allow it to cook off.

6Season beef with salt and pepper.

7Add stock and double cream.

8Cover with a lid, reduce heat to very low, and continue cooking slowly for 3 hours.

9(Start preparing your side dishes during the last hour of cooking.)

10Take beef out of the sauce.

11If you prefer a thicker sauce, dissolve cornstarch in 1-2 tablespoons water and stir into the sauce to thicken.

12Let meat rest for a about 10 minutes before slicing.

13Serve with sauce.
