- 2 large eggs
- 1 large banana
- 1 1/2 cups all-purpose flour
- 3/4 cup milk
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- oil (for frying)
- powdered sugar
Directions

1Heat Oil in deep fryer to 360.

2Whisk eggs in a large bowl.

3Mash banana.

4Add Banana, flour, milk, sugar, baking powder, and salt to eggs.

5Whisk until smooth.

6Drop TBS of batter into hot oil.

7Cook until golden on both sides.

8Remove and sprinkle powdered sugar over Beignets while still warm.
