- 1 stick butter or margarine, at room temperature
- 3/4 c. sugar
- 2 eggs
- 1 1/2 c. flour
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1/2 tsp. salt
- 3 large ripe bananas, mashed
- 1/2 c. shelled walnuts, coarsely chopped
Directions

1Preheat oven to 350°.

2Grease a 9 x 5 x 3-inch bread pan. Cream butter and sugar until light and fluffy.

3Add eggs, one at a time, beating well after each egg.

4Sift flour, baking soda and salt together and add to cream mixture.

5Mix well.

6Fold in bananas, nuts and vanilla.

7Pour mixture into pan.

8Bake 50 to 60 minutes or until cake tester comes out clean.

9Cool in pan 10 minutes, then on rack.

10Makes 1 loaf.
