Banana Bread

Ingredients

  • 1 stick butter or margarine, at room temperature
  • 3/4 c. sugar
  • 2 eggs
  • 1 1/2 c. flour
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 3 large ripe bananas, mashed
  • 1/2 c. shelled walnuts, coarsely chopped

    Preheat oven to 350°.

    Grease a 9 x 5 x 3-inch bread pan. Cream butter and sugar until light and fluffy.

    Add eggs, one at a time, beating well after each egg.

    Sift flour, baking soda and salt together and add to cream mixture.

    Mix well.

    Fold in bananas, nuts and vanilla.

    Pour mixture into pan.

    Bake 50 to 60 minutes or until cake tester comes out clean.

    Cool in pan 10 minutes, then on rack.
