Ingredients

  • 3/4 c. sugar
  • 1 1/2 c. mashed bananas (3 large)
  • 3/4 c. vegetable oil
  • 2 eggs
  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. chopped nuts (optional)
  • 1/2 c. quick oatmeal

Directions

    Heat oven to 325°; grease a 9 x 5 x 3-inch or 8 1/2 x 4 1/2 x 2 1/2-inch pan with shortening, using pastry brush or paper towel. Mix sugar, bananas, oil and eggs in large bowl with a cooking spoon.

    Sift or stir other ingredients together; and stir into banana mixture.

    Pour into pan.

    (Pan can also be lined with waxed paper.)

    Bake for 60 to 70 minutes, until wooden pick inserted in center of bread comes out clean.

    Let cool 10 minutes; then loosen sides of loaf from pan and remove from pan.

    Cool before slicing. Kid tested recipe.
