Ingredients
- 1/4 c. vegetable oil
- 1/3 c. applesauce
- 1 c. sugar
- 2 beaten eggs
- 3 ripe bananas, mashed
- 2 c. flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 3 Tbsp. milk
- 1/2 tsp. vanilla
- 1/2 c. chopped nuts (optional)
Directions

1Beat together in large mixing bowl the oil, applesauce and sugar. Add beaten eggs and mashed bananas. Beat well. Sift together all dry ingredients and add to first mixture. Add milk and vanilla, mixing well. Stir in nuts.

2Pour into large loaf pan that has been greased and floured. Bake at 350° for about 1 hour or until toothpick inserted in center comes out clean.

3Cool in pan for 10 minutes, then on rack out of pan for at least 1 hour before cutting. (Freezes well when tightly wrapped.)
