  • 2 c. sifted all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 c. sugar
  • 2 eggs
  • 1 c. mashed bananas (2 or 3 bananas)
  • 1 Tbsp. vinegar plus milk to make 1/2 c. liquid

    Sift flour, soda and salt.

    Cream the shortening.
  3. 3
    Blend in sugar and eggs, one at a time.

    Beat well until fluffy.

    Add flour mixture alternating with bananas and liquid, beating after each addition.

    Turn into greased loaf pan and bake 60 to 70 minutes at 350°.

    Remove from pan and cool several hours or overnight before slicing.
