  • 1 c. shortening (Crisco)
  • 2 c. white sugar
  • 6 ripe bananas, mashed (5 if real large)
  • 4 whole eggs, one at a time
  • 2 1/2 c. all-purpose flour
  • 1 tsp. salt
  • 1/4 c. rolled black walnuts or pecans
  • 2 tsp. baking soda

    Cream shortening and sugar together until fluffy.

    Add bananas and eggs, one at a time.

    Mix well.

    Sift flour with salt and baking soda and add to banana mixture.

    Add nuts.

    Bake at 325° for an hour in a tube pan or two 9 x 5-inch loaf pans.

    Line bottoms of pans with waxed paper.
