Banana Bread

Ingredients

  • 2 c. sifted flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 c. shortening
  • 1 c. sugar
  • 2 eggs
  • 1 c. mashed ripe bananas (2 or 3)
  • 1 Tbsp. vinegar plus milk to make 1/2 c. liquid

Directions

    Sift together the flour, soda and salt. Cream the shortening, sugar and eggs, one at a time.

    Beat until fluffy. Add flour mixture alternately with bananas and liquid, beating well after each addition. Turn into a greased loaf pan. Bake at 350° for 60 to 70 minutes or until done. Remove from oven and cool, then remove from pan.

    Allow to cool for several hours before slicing.
