  • 1 3/4 c. all-purpose flour
  • 2/3 c. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 c. mashed ripe banana (2 to 3 medium bananas)
  • 1/3 c. shortening, margarine or butter
  • 2 Tbsp. milk
  • 2 eggs
  • 1/4 c. chopped nuts

Directions

    In a large mixer bowl, combine 1 cup flour, the sugar, baking powder, baking soda and salt.

    Add mashed banana, shortening, margarine or butter and milk.

    Beat with an electric mixer on low speed until blended, then on high speed for 2 minutes.

    Add eggs and remaining flour; beat until blended.

    Stir in nuts.
