Ingredients

  • generous 3/4 c. mashed banana
  • 1/3 c. vegetable oil
  • 4 egg whites or 2 extra large eggs
  • 1/2 c. water
  • 2 c. all-purpose flour
  • scant 1/2 tsp. cinnamon
  • scant 1/2 tsp. nutmeg
  • 1 c. chopped nuts (optional)
  • 1 generous tsp. baking soda
  • 2 1/4 generous tsp. baking powder

    Preheat oven to 325°.

    Coat a 9 x 5 x 2 1/4-inch loaf pan with vegetable oil or vegetable shortening.

    In large bowl, using a hand mixer, whip together banana, oil, eggs and water.

    Add flour, cinnamon, nutmeg and nuts (if desired) to banana mixture and mix. Stir in baking soda and baking powder quickly and then mix.
