- 1 3/4 c. flour
- 1 1/4 tsp. baking powder
- 1/2 tsp. baking soda
- 3/4 tsp. salt
- 2/3 c. sugar
- 1/3 c. shortening (I use butter)
- 2 eggs
- 1/2 c. chopped walnuts
- 1 tsp. lemon rind
- 2 or 3 bananas, mashed
Directions

1Sift together flour, baking soda, baking powder and salt; set aside.

2Gradually add sugar to creamed shortening and whip until fluffy.

3Add eggs, one at a time and beat until smooth.

4Add flour mixture, nuts and lemon rind and blend well.

5Add bananas and blend only about 30 seconds.

6Pour batter into greased loaf pan (9 x 5-inch) and bake until brown (350° oven for 55 minutes).

7Turn on rack and cool well.
