Ingredients

  • 1 lb. chorizo (Spanish sausage)
  • 2 cans garbanzo beans
  • 1 pkg. frozen chopped spinach
  • 1 jar whole pimento
  • 4 Tbsp. oil
  • 1 tsp. pepper
  • 1 Tbsp. garlic powder
  • 1 Tbsp. cumin
  • 1 onion, chopped
  • 2 c. water

Directions

    Chop chorizo; fry 5 minutes in oil.

    Add cumin, garlic powder, salt, pepper and onion.

    Fry until onion is transparent.

    Add 2 cups of water; bring to a boil.

    Add garbanzos and spinach; bring to boil again.

    Let simmer for half an hour.

    Carefully stir in pimento, cut into slices.

    Serve with hot bread.
