Ingredients

  • 1/2 c. (1 stick) butter or oleo (lite may be used)
  • 1/2 c. sugar
  • 2 eggs
  • 1 1/2 c. mashed bananas (3 bananas)
  • 1/2 c. chopped walnuts (optional)
  • 2 c. sifted regular all-purpose flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt (may be omitted)

Directions

    Butter loaf pan or spray with any fat free spray (Pam, etc.) Preheat oven to 350°.

    In a mixing bowl, cream butter; gradually add sugar and beat until light and fluffy.

    Beat in eggs, one at a time.

    Blend in bananas and nuts.

    Sift together flour, baking powder, baking soda and salt; gradually add to creamed mixture, beating only until blended.

    Turn into pan.

    Bake 45 to 50 minutes.

    Cool in pan on wire rack 10 minutes; turn out of pan to cool.

    Makes 1 loaf.
