- 2 c. unsifted all-purpose flour
- 2/3 c. sugar
- 3 Tbsp. baking powder
- 1/3 c. margarine or shortening
- 1 c. mashed ripe bananas
- 1/4 c. skim milk
- 2 egg whites, stiffly beaten
Directions

1Measure flour, sugar and baking powder into a mixing bowl.

2Mix well.

3Add margarine, milk and bananas.

4Mix at low speed for 1 minute.

5Fold in stiffly beaten egg whites.

6Pour into 9 x 5 x 3-inch loaf pan which has been greased and floured.

7Bake at 325° for 55 to 60 minutes.

8Makes 1 loaf.
