  • 3/4 c. sugar
  • 1/2 c. oil
  • 2 eggs
  • 1 c. mashed bananas
  • 1 3/4 c. sifted flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 c. chopped nuts (optional)

Directions

    Preheat oven to 325°.

    In a bowl, combine salt, flour, baking powder and baking soda.

    In another bowl, combine sugar, oil and eggs until frothy.

    Add bananas and blend thoroughly.

    Fold in flour mixture until blended.

    Pour into greased bread loaf pan. Bake at 325° for one hour until crust is brown.

    Use a toothpick to test for doneness.

    Let stand for 10 minutes.

    Invert pan to remove loaf; cut into slices.
