Banana Bread Pudding

- 3 medium ripe bananas, divided
- 4 c. (1-inch) cubes day-old raisin bread
- 2 c. skim milk
- 1 1/4 c. sugar
- 1 c. egg substitute
- 1 tsp. vanilla
Directions

1Preheat oven to 350°. In food processor or blender puree 2 bananas.

2Measure out 2 cups puree; set aside.

3Slice remaining banana; set aside.

4Spray a 2 1/2-quart shallow baking dish with nonstick cooking spray.

5Add bread cubes.

6In small bowl combine banana puree, milk, sugar, egg substitute and vanilla. Pour banana mixture over bread cubes.

7Stir in banana slices.

8Bake for 30 to 35 minutes until set.

9Serve warm.
