  • 4 c. ripe bananas, cut fine
  • 2 eggs, beaten
  • 1 1/2 c. sugar
  • 1/2 c. oil
  • 1 tsp. vanilla
  • 1/2 c. nuts, chopped (optional)
  • 2 c. flour
  • 2 tsp. baking soda
  • 1 tsp. salt

Directions

    Cream bananas, eggs, sugar, oil and vanilla.

    Stir in nuts. Add dry ingredients, just until all ingredients are moistened.

    Do not overmix.

    Turn into a greased and floured 9 x 13-inch cake pan. Bake at 350° for 40 to 45 minutes.

    May frost cake if you wish or it's delicious unfrosted.
