  • 2 1/2 c. sifted Softasilk cake flour
  • 1 2/3 c. sugar
  • 1 1/4 tsp. baking powder
  • 1 1/4 tsp. soda
  • 1 tsp. salt
  • 2/3 c. soft shortening
  • 2/3 c. buttermilk
  • 1 1/4 c. mashed ripe bananas (about 3)
  • 2 large eggs
  • 2/3 c. chopped nuts

Directions

    Sift together Softasilk, sugar, baking powder, soda and salt. Add shortening, 1/2 of the buttermilk and bananas.

    Beat for 2 minutes. Add remaining liquid with the eggs.

    Fold in nuts.

    Pour into greased and floured 13 x 9-inch pan or two 9-inch layer pans. Bake at 350° for 30 to 35 minutes.
