  • 1 1/4 c. cornmeal
  • 1/4 c. wheat germ
  • 1/4 c. potato flour
  • 1/2 c. soy flour
  • 2 eggs
  • 1/2 c. mashed banana
  • 1 Tbsp. or pkg. yeast, softened in 2 Tbsp. warm water
  • 1/2 c. honey
  • 2 Tbsp. corn oil

    Place cornmeal, wheat germ, potato flour, soy flour and softened

    yeast in a bowl. In another bowl, beat the eggs and all other

    ingredients.

    Add the dry ingredients to the moist mixture and mix well.

    Place in prepared 9 x 5 x 2-inch bread pan and let rise about 1 hour.

    Bake in a 325° oven for 40 to 50 minutes. Yield:
