- 1/4 c. wheat germ
- 1/4 c. potato flour
- 1/2 c. soy flour
- 2 eggs
- 1/2 c. mashed banana
- 1 Tbsp. or pkg. yeast, softened in 2 Tbsp. warm water
- 1/2 c. honey
- 2 Tbsp. corn oil
Directions

1Place cornmeal, wheat germ, potato flour, soy flour and softened

2yeast in a bowl. In another bowl, beat the eggs and all other

4Add the dry ingredients to the moist mixture and mix well.

5Place in prepared 9 x 5 x 2-inch bread pan and let rise about 1 hour.

6Bake in a 325° oven for 40 to 50 minutes. Yield:
