- 2 1/4 c. sifted flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. shortening
- 1/4 c. sour milk or buttermilk
- 1 c. sugar
- 2 eggs
- 1 tsp. vanilla extract
- 1 c. mashed ripe bananas
- 2 or 3 bananas
Directions

1Sift together flour, baking powder, soda and salt.

2Use electric beater.

3Beat shortening until creamy.

4Add sugar gradually and continue beating until light and fluffy.

5Add eggs, one at a time, beating after each addition until fluffy.

6Stir in vanilla.

7Add flour mixture alternately with milk and bananas, a little at a time, beating after each addition until smooth.

8Put into well-greased cupcake pan.

9Bake at 375° for 25 minutes. Frost with your favorite frosting.

10Makes 18 to 20 cupcakes.
