- 1/2 c. butter or margarine
- 2 egg yolks
- 1 c. mashed banana (3 medium)
- 1 tsp. vanilla
- 2 c. cake flour
- 1 tsp. baking soda
- 1/4 tsp. salt
Directions

1Beat egg whites until stiff.

2Beat sugar, butter, egg yolks, banana and vanilla on medium speed until fluffy.

3Sift and beat remaining ingredients on low speed.

4As soon as the last of the flour disappears, fold in the beaten egg whites.

5Spoon into muffin cups.

6Bake at 350° for 25 minutes.
