  • 2 2/3 cup all-purpose flour
  • 1 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 stick butter or margarine
  • 1 cup brown sugar
  • 3/4 cup sugar
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 2 ripe bananas, mashed
  • 1/2 cup milk, buttermilk, coconut milk or almond milk
  • 1 cup shredded coconut, optional
  • 1 cup chopped nuts, optional

    Preheat oven to 350F

    Line muffin pan with cupcake liners or grease and flour 2, 9 inch cake pans if making cake

    Whisk flour, baking soda, and salt together and set aside
  4. 4
    In large mixing bowl, cream butter and both sugars with hand mixer
  5. 5
    Add eggs and vanilla and mix well
  6. 6
    Add mashed bananas and mix well

    Mix in flour mixture and milk alternately
  8. 8
    Fill cupcake liners 2/3 of the way full or pour into cake pans

    Bake cupcakes for 18 minutes and cake for 40 to 45 minutes or until tooth pick inserted comes out clean
