- 2 c. skim milk
- 2 eggs
- 1/4 c. sugar
- 1/2 tsp. rum extract
- 1/4 c. red currant jelly
- 1 banana
Directions

1Combine milk, eggs and sugar in saucepan. Cook over low heat until mixture thickens (do not boil), stirring constantly. Stir in extract and spoon custard into 4 dessert dishes.

2Cover and refrigerate about 1 hour. Before serving, melt jelly and stir in diced banana. Spoon 1/4 of jelly mixture on top of each custard. Serves 4.
