Banana Fluff Cake

Ingredients

  • 1 1/2 c. sugar
  • 1/2 c. shortening
  • 2 eggs
  • 1 tsp. vanilla
  • 1 c. mashed bananas
  • 1/4 c. buttermilk
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 2 c. flour
  • 1/2 to 1 c. nuts (save some nuts for top of cake)
  • 1 box banana instant pudding
  • Cool Whip

Directions

    Mix eggs, sugar and shortening together.

    Add vanilla, bananas, buttermilk and baking soda.

    Mix well.

    Add baking powder, flour, salt and nuts.

    Beat until fluffy.

    Bake at 350° for 30 to 35 minutes in a 9 x 13-inch pan.

    Cool.

    Mix 1 package of banana instant pudding according to box directions.

    Spread over cake. Spread Cool Whip over this.
