Ingredients
- 2 lb. flour
- 2 tsp. soda
- 1 Tbsp. salt
- 2 c. sugar
- 5 eggs, beaten
- 1 qt. (3 1/2 lb.) mashed bananas
- 4 oz. (1 c.) nonfat dry milk
- 3 c. pecan pieces
- 1/2 lb. butter, melted
- 1 c. lemon juice
- 2 Tbsp. baking powder
Directions

1Sift flour, baking powder, soda, dry milk, salt and sugar. Add pecans; mix well.

2Combine beaten eggs, butter, bananas and lemon juice.

3Add dry ingredients; mix only until flour is moistened.

4Divide into 6 well-greased loaf pans (3 1/2 x 8 x 2 1/2-inch).

5Bake in a 325° oven for 40 to 45 minutes, or until done.

6Cool thoroughly.

7Wrap in foil; store overnight.

8Good for freezing.
