Banana Walnut Bread

Ingredients

  • 1/2 cup butter, at room temperature
  • 1/2 cup granulated sugar
  • 2 None eggs, at room temperature
  • 7 oz mashed ripe bananas + 1 banana, sliced
  • 1 cup self-rising flour + 2 tbsp
  • 1/2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 1 1/4 cups walnuts, coarsely chopped
  • 1 tbsp brown sugar
  • None None strawberries, to serve
  • None None vanilla yogurt, to serve

Directions

    Preheat oven to 350°F. Grease and line an 8x4 inch loaf pan with parchment paper. Cream butter and sugar until light and fluffy. Add eggs, 1 by 1, beating well after each addition. Add mashed banana. Sift and fold in flour, baking soda and spices until just combined. Transfer to prepared pan.

    Toss together sliced banana, walnuts and brown sugar then spread evenly over top of batter in pan. Bake for 55 mins, or until a skewer inserted in the center comes out clean. Let cool for 10 mins in pan then transfer to a wire rack to cool completely. Serve with strawberries and yogurt.
