Bananas In Rum

- 2 c. water
- 1/2 c. white sugar
- 1/2 c. brown sugar
- 2 slices lemon (with rind), halved
- 4 slices orange (with rind), halved
- 1 tsp. rum extract
- 6 large ripe bananas
- 1/4 c. butter
- 2 oz. dark Jamaica rum
Directions

1Boil the water, sugars and fruit until the syrup will glaze on a spoon.

2Add the extract.

3Slice the bananas and saute them in butter. Gently fold the bananas into the syrup.

4Divide the fruit mix and syrup between 6 dessert cups. Sprinkle a teaspoon of rum over each serving.

5This is best served hot.
