Banberry Pie

Ingredients

  • 1 (16 oz.) container strawberries (save juice)
  • 3 medium bananas
  • 6 Tbsp. sugar
  • 3 1/2 Tbsp. cornstarch
  • 1/8 tsp. salt
  • 1 1/2 c. strawberry juice plus water
  • 2 tsp. lemon juice
  • 1 (9 or 10-inch) pie shell, baked

    Mix cornstarch and sugar in a saucepan.

    Stir in the salt and liquid.

    Bring to a boil over medium heat, stirring constantly. Remove from heat and cool.

    Add lemon juice and berries.

    Slice bananas into pie shell.

    Pour berry mixture over them and chill at least 2 hours.

    Just before serving, top with sweetened whipped cream.

    Makes one 9-inch pie.
