Ingredients
- 4 c. unbleached flour - (to 5 c.) plus more
- 1 dsh salt
- 1 pkt dry yeast - (1/4 ounce)
- 1 tsp water
- 1/4 c. sugar
- 3/4 c. butter - (1 1/2 sticks)
- 1 1/2 c. lowfat milk Oil for greasing
- 3 c. raisins
- 1 c. mixed peel see * Note
- 1 x egg beaten

1* Note: Mixed peel is a wonderful baking staple available in Britain which is basically dry, slightly candied citrus peel.

2I do not find the equivalent here, but I got nice results using some of Trader Joe's special mixed dry fruit combinations (like tropical fruit combination).

3Mix flour and dash salt in bowl.

4In another small bowl, combine yeast with water and 1 tsp.

5sugar and mix to a paste, then stir in remaining sugar.

6Heat butter with lowfat milk in small saucepan, then cold till lukewarm.

7Combine with yeast mix.

8Pour liquid ingredients into flour mix and stir to create soft dough.

9Turn dough out onto floured board and knead at least 10 min till smooth and elastic.

10Put kneaded dough into lightly oiled bowl.

11Cover with plastic wrap and let rise in hot place till doubled in size, 2 hrs.

12Turn dough onto board again, press flat and sprinkle raisins and peel over.

13Form into ball and knead again to mix raisins and peel through.

14Shape into round dome about 10 inches in diameter - a bannock.

15Raisins will break up with kneading and create pretty, brown-flecked dough.

16Brush top and sides with beaten egg, then leave in hot place till well-risen, about 1 hour.

17Bake at 425 degrees 15 min, then reduce heat to 375 degrees and bake 20 min more.

18Remove from oven.

19Test for doneness by tapping base of loaf.

20It should sound hollow.

21Cold before slicing.

22This recipe yields 12 servings.
